From cafe kitchens and Chef's Hat restaurants to brewing, foraging, and founding Bantam.

The path began in the heat of a busy cafe kitchen, where the rhythm of service sparked a love for food and flavour. That passion carried through vineyard life at Centennial Vineyards, a fine dining apprenticeship at Eschalot under a coveted Chef's Hat, and travels through France and Germany.

A pivotal chapter at Biota — a two Chef Hat restaurant — brought foraging, farm visits, and native ingredients into sharp focus. Then came brewing at Eden Brewery, where years of working with botanicals, fermentation, and flavour profiles laid the foundation for Bantam.
